This is the MOST AMAZING passionfruit curd you can find! It is light and fluffy in texture, and full of flavour. This recipe doesn't have butter in it, which is unusual for a curd.

Ingredients

 4 eggs
 8 egg yolks
 8 passionfriut
 250 g white sugar
 1 large lemon, juice only

Place butterfly in bowl.

Add all ingredients in TM bowl and cook for 12 minutes at 80C on speed 3. MC in place.

Put curd into sterilised jar and allow to set in the fridge for at least 30 mins (4 hours is ideal).

Notes

You can use the same recipe for raspberry curd. Use 250g of frozen raspberries.
Don't throw out the egg whites - whip up a pavlova too!
